Finally out of winter and the sun is shining! British seasonal fruit and vegetables are still limited in terms of harvest. However there are some addition of spring delights like radishes, spring onions, spinach, watercress and even some herbs this month to feel like Spring is here!
Purple sprouting broccoli offers the same nutritional benefits found in broccoli. High in phytonutrients that support all processes of detoxification within our bodies. Different nutrients from different vegetables support either phase 1 or phase 2 of our body’s detoxification systems, but glucosinolates from broccoli support both.
Broccoli is high in many nutrients, including fiber, vitamin C, vitamin K, iron, and potassium. They are particulary high in vitamin C, just 1 cup offers 135% of the daily recommended value, so it can also help support your immune system. It also boasts more protein than most vegetables. Proteins are the building blocks of your body, necessary for both growth and maintenance. However, because of its high water content, 1 cup (91 grams) of broccoli only provides 3 grams of protein which is relatively low.
Spring greens belong to the brassica family. They are full of flavour and packed with vitamins C, E and K, iron, potassium, fibre and calcium. The stems are actually sweeter than the leaf so don’t discard them. Slice them more thinly than the green parts and add to stir-fry or salad. To make the most of the nutrients in spring greens, refrigerate them and eat as close to purchase as possible.
Spring onions also known as scallions, are simply young onions. They contain micronutrients including folate, vitamins K and C. It is best to wrap them in a slightly damp kitchen towel. Store them in the bottom drawer of your fridge for up to 10 days. You can also chop and freeze spring onions and leeks to make them last several months. Make sure to store them in a resealable bag or airtight container.
